Ingredients
Scale
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg
1 cup plain nonfat Greek yogurt
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
For the Swirl: 1/4 cup granulated sugar
For the Swirl: 1 tablespoon ground cinnamon
For the Swirl: 1 tablespoon melted butter
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking soda, baking powder, salt, and 1 teaspoon of cinnamon. Set aside.
In a separate medium bowl, whisk together the granulated sugar, brown sugar, egg, Greek yogurt, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
In a small bowl, mix the swirl sugar and 1 tablespoon of cinnamon together. Stir in the 1 tablespoon of melted butter until crumbly.
Fill each muffin cup about two-thirds full with batter.
Sprinkle about 1 teaspoon of the cinnamon swirl mixture over the top of each muffin. Use a knife or toothpick to gently swirl the topping into the batter a few times.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a higher protein muffin, substitute half of the all-purpose flour with whole wheat flour.
If you prefer a stronger cinnamon flavor, increase the cinnamon in the main batter to 1 1/2 teaspoons.
You can use full-fat Greek yogurt, but nonfat results in a lighter texture.
