Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil.
  3. Grill the corn for 8-10 minutes, turning occasionally, until lightly charred and tender.
  4. In a small bowl, mix together mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using).
  5. Spread the mayonnaise mixture evenly over the grilled corn.
  6. Season with salt to taste.
  7. Serve immediately.

Notes

  • For extra char, grill the corn directly over the flame for a minute or two.
  • If you don’t have cotija cheese, feta cheese can be a good substitute.
  • Adjust the spice level to your preference by adding more or less cayenne pepper.
  • Garnish with extra cilantro and lime wedges for an added touch.
