Make these easy grilled shrimp skewers coated in a spicy, sweet, and creamy Bang Bang sauce. This recipe is perfect for quick weeknight dinners or summer barbecues.

Ingredients

Scale
  • 1.5 lbs large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 wooden or metal skewers (if using wood, soak them for 30 minutes)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha or chili garlic sauce (adjust to your heat preference)
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the shrimp: Pat the shrimp dry with paper towels. Toss the shrimp in a bowl with olive oil, salt, and pepper. Set aside.
  2. Make the Bang Bang sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, honey, and minced garlic until smooth. Reserve half of the sauce for dipping or drizzling after grilling.
  3. Marinate: Toss the seasoned shrimp with half of the remaining Bang Bang sauce. Let it marinate for 10 minutes while you prepare the grill. Do not marinate for longer than 20 minutes as the lime juice can start to cook the shrimp.
  4. Assemble skewers: Thread 3 to 4 shrimp onto each skewer.
  5. Preheat the grill: Heat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grates to prevent sticking.
  6. Grill the shrimp: Place the skewers on the hot grill. Grill for 2 to 3 minutes per side. Shrimp cooks quickly; they are done when they turn pink and opaque.
  7. Glaze: During the last minute of cooking, brush the shrimp lightly with the remaining reserved sauce mixture (not the dipping sauce portion).
  8. Serve: Remove the skewers from the grill. Garnish immediately with fresh chopped cilantro. Serve hot with the reserved Bang Bang sauce on the side for dipping.

Notes

  • For extra flavor, thread small pieces of red onion or bell pepper between the shrimp on the skewers.
  • If you prefer a stickier glaze, brush the shrimp with a mixture of 1 part sweet chili sauce and 1 part honey during the last minute of grilling.
  • If you do not have a grill, you can cook these skewers in a hot skillet over medium-high heat for 3 minutes per side.
