Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 6 cups vegetable broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups chopped kale or spinach
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving (optional)
  • Crusty bread, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced tomatoes, vegetable broth, cannellini beans, Great Northern beans, oregano, thyme, and red pepper flakes if you are using them.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes to allow flavors to blend.
  6. Stir in the chopped kale or spinach. Cook until the greens wilt, about 3 to 5 minutes.
  7. Taste the soup and season generously with salt and pepper.
  8. Serve hot, topped with Parmesan cheese if desired, alongside crusty bread for dipping.

Notes

  • You can use any hearty white bean you have on hand.
  • For a thicker soup, mash about one cup of the beans against the side of the pot before adding the greens.
  • This soup tastes even better the next day.
