Ingredients
Scale
6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 teaspoon dried sage
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, halved
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Pat the chicken thighs completely dry with paper towels. This helps achieve crispy skin.
In a small bowl, mix the olive oil, chopped rosemary, thyme, sage, minced garlic, salt, and pepper.
Place the chicken thighs in a large bowl or directly onto a rimmed baking sheet. Rub the herb mixture evenly over all surfaces of the chicken, getting some under the skin if possible.
Place the lemon halves cut-side down on the baking sheet around the chicken.
Arrange the chicken thighs skin-side up on the baking sheet, ensuring they are not touching.
Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
For extra crispy skin, switch the oven to the broil setting for the last 2 to 3 minutes, watching closely to prevent burning.
Remove from the oven and let the chicken rest for 5 minutes before serving. You can use the pan drippings to make a simple sauce.
Notes
For best results, let the seasoned chicken sit at room temperature for 30 minutes before roasting.
If you are using boneless, skinless thighs, reduce the cooking time by about 10 to 15 minutes.
Toss root vegetables like potatoes or carrots onto the pan during the last 30 minutes of cooking for a one-pan meal.
