Ingredients
Scale
1 cup rolled oats
1 scoop vanilla protein powder
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup low-fat cottage cheese
2 large eggs
1/2 cup unsweetened almond milk
1 teaspoon vanilla extract
Instructions
Combine the rolled oats and protein powder in a food processor. Pulse until the oats resemble a coarse flour.
Add the oat mixture, baking powder, cinnamon, and salt to a large bowl. Whisk them together.
In a separate bowl, blend the cottage cheese, eggs, almond milk, and vanilla extract until completely smooth. You want no lumps from the cottage cheese.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
Preheat your waffle iron and lightly spray it with cooking spray.
Pour the batter onto the hot iron according to your waffle maker’s instructions. Cook until golden brown and crisp.
Serve immediately with your favorite protein-packed toppings.
Notes
For extra fluffiness, separate the eggs. Whip the egg whites to soft peaks and gently fold them into the batter at the end.
If you prefer a different flavor, use unflavored protein powder and add 1 tablespoon of sugar substitute or a dash of maple syrup.
These waffles freeze well. Cool them completely, then stack with parchment paper in between before placing them in a freezer bag for meal prep breakfast waffles.
If the batter seems too thick, add almond milk one tablespoon at a time until you reach a thick but pourable consistency.
