Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 box (3.9 ounces) instant chocolate pudding mix
  • 2 cups cold milk (for pudding)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes. The batter will be thin.
  4. Carefully pour the boiling water into the batter and mix on low speed until just combined. The batter will be very thin.
  5. Pour the cake batter evenly into the prepared baking pan.
  6. Prepare the instant chocolate pudding according to the package directions using 2 cups of cold milk. Let it sit for about 5 minutes to thicken slightly.
  7. Drop small spoonfuls (about 1 teaspoon each) of the prepared pudding randomly over the top of the cake batter. Do not cover the entire surface; leave space between the dollops.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted near the edge comes out clean. The pudding will sink and create a layer beneath the cake.
  9. Let the cake cool slightly before serving warm. You will find the pudding layer underneath the baked cake.

Notes

  • Sasha suggests adding a pinch of cayenne pepper to the dry ingredients for a slight kick.
  • Serve this cake warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • You can use hot brewed coffee instead of boiling water for a deeper chocolate flavor.
