Create a light, airy, and intensely flavorful Iced Cappuccino Mascarpone Mousse. This recipe blends strong espresso with creamy mascarpone for a delightful, cool coffee treat. Sasha brings her intuitive touch to this easy-to-make dessert.

Ingredients

Scale
  • 1 cup strong brewed espresso, cooled
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold
  • Pinch of salt

Instructions

  1. Brew espresso and let it cool completely.
  2. In a small saucepan, whisk together the cooled espresso and sugar until the sugar dissolves.
  3. In a separate bowl, whisk the egg yolks. Slowly pour about half of the warm espresso mixture into the yolks while whisking constantly to temper them.
  4. Pour the tempered egg mixture back into the saucepan with the remaining espresso. Cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens slightly and coats the back of the spoon (do not boil). This is your zabaglione base.
  5. Remove the base from the heat and stir in the vanilla extract and salt. Let it cool completely.
  6. In a large bowl, beat the softened mascarpone cheese until smooth. Gently fold the cooled espresso zabaglione base into the mascarpone until just combined.
  7. In a separate, clean bowl, whip the cold heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the mascarpone-espresso mixture in two additions until you have a light, uniform mousse.
  9. Spoon or pipe the mousse into serving glasses. Chill for at least 2 hours before serving cold.

Notes

  • You can use instant espresso powder mixed with hot water if brewing fresh espresso is not possible.
  • For an extra coffee kick, add a splash of coffee liqueur when folding in the whipped cream.
  • Taste the mousse before chilling; adjust sugar if your espresso is particularly bitter.
  • Sasha suggests serving this with a light dusting of cocoa powder on top.
