Ingredients
Scale
2 lbs small yellow or red potatoes, quartered
1 cup water
1 teaspoon salt
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup heavy cream
4 ounces cream cheese, cubed
1/4 cup grated Parmesan cheese
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Place the quartered potatoes and water into the inner pot of your Instant Pot. Sprinkle with salt.
Secure the lid and set the vent to sealing. Cook on High Pressure for 4 minutes.
Allow for a Natural Pressure Release for 5 minutes, then carefully perform a Quick Release for any remaining pressure. Remove the potatoes and set them aside. Discard the cooking water.
Add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Reduce the heat setting to Low or press Cancel and let the pot cool slightly. Add the heavy cream, cream cheese cubes, Parmesan cheese, and black pepper. Stir constantly until the cream cheese is fully melted and the sauce is smooth.
Return the cooked potatoes to the pot. Gently toss the potatoes in the sauce until they are fully coated and creamy.
