Make a rich, creamy spinach artichoke dip quickly using your Instant Pot. This method melts the cheese perfectly for a hot, ready-to-serve appetizer.

Ingredients

Scale
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup water (for the Instant Pot)
  • Trivet or sling (for pot-in-pot method)

Instructions

  1. In a medium, oven-safe or heat-safe bowl that fits inside your Instant Pot, combine the cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, spinach, artichoke hearts, garlic, salt, and pepper. Mix until just combined.
  2. Pour 1 cup of water into the inner pot of your Instant Pot. Place the trivet or sling inside the pot.
  3. Carefully lower the bowl containing the dip mixture onto the trivet.
  4. Secure the lid on the Instant Pot and set the valve to Sealing.
  5. Cook on High Pressure for 5 minutes.
  6. When the cooking time is complete, perform a Quick Release of the pressure.
  7. Carefully remove the bowl from the Instant Pot using oven mitts. Stir the dip thoroughly until it is completely smooth and creamy.
  8. Serve immediately with chips, crackers, or bread for dipping.

Notes

  • Squeeze as much liquid as possible from the thawed spinach to prevent a watery dip.
  • If you prefer a slightly browned top, transfer the finished dip to an oven-safe dish and broil for 1-2 minutes before serving.
  • For a thicker dip, reduce the amount of sour cream slightly.
