Prepare savory, quick Korean-style beef and rice in your Instant Pot for a fast weeknight meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon gochujang (Korean chili paste, optional for heat)
  • 1/2 cup water or beef broth
  • 2 cups uncooked white rice
  • 2 cups water (for rice)
  • For serving: Sliced green onions, sesame seeds, cooked rice

Instructions

  1. Place the ground beef, soy sauce, brown sugar, sesame oil, rice vinegar, ginger, garlic, gochujang (if using), and 1/2 cup water or broth into the inner pot of your Instant Pot. Stir to combine the sauce ingredients with the beef.
  2. Secure the lid on the Instant Pot and set the vent to the sealing position.
  3. Select the ‘Manual’ or ‘Pressure Cook’ setting and set the time for 5 minutes on High Pressure.
  4. When the cooking cycle finishes, allow the pressure to naturally release for 5 minutes, then carefully quick release any remaining pressure.
  5. Remove the lid. Stir the beef mixture well to break up the meat and incorporate the sauce. The sauce will thicken slightly as it cools.
  6. While the beef cooks, prepare the rice separately using your preferred method (or use the pot-in-pot method if you are familiar with it, adding 2 cups rice and 2 cups water to a separate pot placed on a trivet above the beef mixture).
  7. Serve the Korean beef mixture over a bed of cooked white rice. Garnish with sliced green onions and sesame seeds.

Notes

  • For a thicker sauce, you can remove the beef after cooking and set it aside. Use the Sauté function to reduce the remaining liquid until it coats the back of a spoon, then return the beef.
  • If you prefer a less sweet flavor, reduce the brown sugar to 3 tablespoons.
  • Use low sodium soy sauce to better control the final salt content of the dish.
