Ingredients
Scale
2 slices sourdough bread
2 tablespoons unsalted butter, softened
2 ounces cream cheese, softened
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded sharp Cheddar cheese
2 tablespoons diced pickled jalapeños, drained
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
Instructions
In a small bowl, combine the softened cream cheese, Monterey Jack, Cheddar, diced jalapeños, Worcestershire sauce, and garlic powder. Mix until you have a uniform, creamy filling.
Spread butter evenly on one side of each slice of bread.
Flip the bread slices over. On the unbuttered side of one slice, spread the entire jalapeño popper filling mixture evenly.
Top with the second slice of bread, butter-side up.
Heat a non-stick skillet or griddle over medium-low heat.
Place the sandwich in the skillet. Cook for 3 to 4 minutes per side, pressing down gently with a spatula occasionally. Cook slowly to allow the cheese filling to heat through and melt completely before the bread burns.
Remove from the skillet when both sides are golden brown and the filling is melted.
Slice in half and serve immediately.
Notes
For a crispier exterior, use Texas toast or a sturdy white bread.
If you prefer more heat, use fresh, seeded jalapeños instead of pickled ones.
For a richer flavor, substitute half the butter with mayonnaise when grilling the outside of the bread.
If you want a smoother filling, use only shredded cheese and skip the cream cheese, increasing the shredded cheese by 1 ounce.
