Ingredients
Scale
4 (6 ounce) cod fillets
4 tablespoons unsalted butter, melted
1/2 cup grated Parmesan cheese
1/4 cup almond flour
1 teaspoon garlic powder
1/2 teaspoon dried parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the cod fillets dry with paper towels. Place them on the prepared baking sheet.
In a small bowl, combine the melted butter, grated Parmesan cheese, almond flour, garlic powder, parsley, salt, and pepper. Mix until a thick paste forms.
Spoon the butter-Parmesan mixture evenly over the top of each cod fillet, pressing gently to create a crust.
Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.
Serve immediately.
Notes
For extra flavor, add 1/2 teaspoon of lemon zest to the crust mixture.
If you prefer a crispier top, switch the oven to broil for the last 1-2 minutes, watching closely to prevent burning.
Almond flour keeps this crust low in carbohydrates.
