Ingredients
Scale
1 cup unsweetened almond milk
2 tablespoons unsweetened cocoa powder
2 tablespoons natural peanut butter (check for no added sugar)
1/4 avocado (for creaminess)
1 scoop keto-friendly vanilla or chocolate protein powder (optional)
1/2 teaspoon xanthan gum (for thickness)
Sweetener to taste (e.g., 10-15 drops liquid stevia or monk fruit)
4-6 ice cubes
Instructions
Place the almond milk, cocoa powder, peanut butter, avocado, protein powder (if using), xanthan gum, and sweetener into a high-speed blender.
Add the ice cubes last.
Blend on high speed until the mixture is completely smooth and thick. Stop and scrape down the sides if needed.
If the shake is not thick enough, add 1-2 more ice cubes or a small amount of MCT oil and blend again.
Pour immediately into a glass and serve.
Notes
For an extra cold and thick shake, freeze the almond milk in ice cube trays beforehand and use those instead of fresh ice cubes.
If you do not have xanthan gum, you can use 1/4 cup of frozen heavy whipping cream instead to achieve thickness.
Adjust the amount of cocoa powder to control the intensity of the chocolate flavor.
