Ingredients
Scale
4 boneless, skinless chicken breasts
1 tablespoon olive oil
4 ounces cream cheese, softened
1/2 cup heavy cream
1/2 cup shredded Monterey Jack cheese
1/4 cup shredded cheddar cheese
2 jalapenos, seeded and minced (use gloves)
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
2 slices bacon, cooked and crumbled (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Season the chicken breasts with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 3 minutes per side until lightly browned. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Add the softened cream cheese and heavy cream to the skillet. Stir constantly until the cream cheese melts and the sauce is smooth.
Stir in the Monterey Jack cheese, cheddar cheese, and minced jalapenos. Cook until the cheese melts and the sauce thickens slightly, about 3 minutes.
Place the seared chicken breasts into the prepared baking dish. Pour the creamy jalapeno mixture evenly over the chicken.
Bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the sauce is bubbly.
Remove from the oven. Sprinkle with crumbled bacon, if using, before serving.
Notes
For a smoother sauce, ensure your cream cheese is fully softened before mixing.
If you prefer less heat, remove all seeds and white membranes from the jalapenos.
You can substitute chicken thighs for breasts if desired; adjust cooking time as needed.
