Ingredients
Scale
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Place an oven rack in the middle position.
Pat the chicken thighs completely dry using paper towels. This step is key for crispy skin.
In a small bowl, mix the salt, pepper, garlic powder, paprika, and cayenne pepper.
Rub the olive oil over the entire surface of the chicken thighs.
Sprinkle the seasoning mix evenly over the skin side of the chicken, pressing lightly so it adheres.
Place the chicken thighs skin-side up on a wire rack set inside a baking sheet. Do not let the chicken touch the pan directly.
Bake for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply golden brown and crisp.
Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
For extra crispiness, you can place the chicken in the refrigerator uncovered for at least one hour before seasoning and baking. This dries the skin further.
If the skin is not fully crisp after the initial bake time, switch the oven setting to broil for 1 to 3 minutes, watching constantly to prevent burning.
Use a meat thermometer inserted into the thickest part of the thigh, avoiding the bone, to check for doneness.
