Ingredients
Scale
1.5 lbs thinly sliced beef (ribeye or sirloin)
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons sesame oil
2 tablespoons mirin (rice wine)
1 tablespoon minced garlic
1 teaspoon grated fresh ginger
1/2 teaspoon black pepper
1 small onion, thinly sliced
2 green onions, sliced (for garnish)
Cooked white or brown rice (for serving)
Instructions
In a medium bowl, whisk together the soy sauce, brown sugar, sesame oil, mirin, minced garlic, grated ginger, and black pepper. This is your marinade.
Add the thinly sliced beef and sliced onion to the marinade. Toss well to coat every piece.
Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Heat a large skillet or wok over medium-high heat. You do not need to add extra oil if your pan is non-stick or if you use a small amount of the reserved marinade.
Add the marinated beef and onions to the hot skillet in a single layer, working in batches if necessary to avoid overcrowding the pan.
Cook for 2-3 minutes per side until the beef is nicely caramelized and cooked through.
Serve the cooked bulgogi immediately over bowls of warm rice.
Garnish with sliced green onions before serving.
Notes
Sasha suggests using a high-heat oil if your pan smokes too much with the marinade.
For an extra kick, add a pinch of red pepper flakes to the marinade.
Thinly slice the beef yourself against the grain for the best texture, or ask your butcher to do it.
