Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 cup stone-ground grits
4 cups chicken broth or water
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
4 tablespoons unsalted butter, divided
3 cloves garlic, minced
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
Bring the chicken broth or water to a boil in a medium saucepan.
Slowly whisk in the grits. Reduce heat to low, cover, and simmer according to package directions, stirring occasionally, until creamy (about 20-30 minutes).
While grits cook, season the shrimp with salt and pepper.
Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.
Add the shrimp and cook for 1-2 minutes per side until pink and cooked through. Remove shrimp from the skillet and set aside.
Add the remaining 3 tablespoons of butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Stir in the lemon juice and lemon zest. Cook for 1 minute, scraping up any browned bits from the bottom of the pan.
Stir the heavy cream and Parmesan cheese into the cooked grits until smooth and creamy. Season with salt and pepper.
Return the shrimp to the skillet with the lemon-garlic sauce. Toss gently to coat.
Serve the lemon garlic butter shrimp immediately over the creamy grits. Garnish with fresh parsley.
Notes
Use stone-ground grits for the best texture. Quick-cooking grits will change the cooking time.
Taste the grits before adding salt; the broth and cheese already contain sodium.
You can add a pinch of red pepper flakes to the sauce for a little heat.
