Ingredients

Scale
  • 2 (1-inch thick) steaks (e.g., ribeye or sirloin)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges, for serving

Instructions

  1. Pat the steaks dry with paper towels.
  2. In a small bowl, whisk together the lemon juice, olive oil, rosemary, thyme, and minced garlic. This is your bright marinade.
  3. Place the steaks in a shallow dish or resealable bag. Pour the marinade over the steaks, turning to coat them completely.
  4. Marinate the steaks in the refrigerator for at least 30 minutes, but no longer than 2 hours.
  5. Remove the steaks from the refrigerator 30 minutes before grilling to let them come toward room temperature. Discard the remaining marinade.
  6. Preheat your grill to medium-high heat. Clean and lightly oil the grates.
  7. Season both sides of the steaks with salt and pepper.
  8. Grill the steaks for 4-6 minutes per side for medium-rare, depending on thickness. You want good grill marks.
  9. Remove the steaks from the grill and let them rest on a cutting board for 5-10 minutes before slicing.
  10. Serve immediately with fresh lemon wedges.

Notes

  • Sasha suggests tasting your herbs before adding them; fresh is best for this recipe.
  • If you like more heat, add a pinch of red pepper flakes to the marinade.
  • Resting the steak is key; it keeps your juices inside the meat.
