Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup whole milk
  • 1/2 cup whole milk ricotta cheese
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • Zest of 1 large lemon
  • 2 tablespoons unsalted butter, melted, plus more for the griddle
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Powdered sugar, for dusting (optional)
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate medium bowl, whisk the milk, ricotta cheese, egg yolks, vanilla extract, and lemon zest until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently whisk until just combined. Do not overmix; a few lumps are fine.
  4. Stir in the 2 tablespoons of melted butter.
  5. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
  6. Gently fold the beaten egg whites into the pancake batter in two additions until just incorporated. You want to keep the batter airy.
  7. Heat a lightly buttered griddle or large nonstick skillet over medium heat.
  8. For each pancake, pour about 1/4 cup of batter onto the hot griddle.
  9. Cook for 2-3 minutes per side, until golden brown and cooked through. Flip carefully.
  10. Serve immediately topped with fresh berries, a dusting of powdered sugar, and maple syrup.

Notes

  • For the fluffiest pancakes, use whole milk ricotta cheese.
  • Separate the eggs while they are cold, but let the whites warm slightly before beating for better volume.
  • If you prefer a tangier flavor, use fresh lemon juice in place of a small amount of the milk.
  • You can substitute your favorite combination of seasonal fruit for the berries.
