Ingredients

Scale
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1/4 teaspoon salt
  • Pinch of cumin
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped cucumber
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon pine nuts, lightly toasted
  • 1 teaspoon smoked paprika
  • Pita bread or vegetable sticks for dipping

Instructions

  1. Combine chickpeas, tahini, lemon juice, garlic, 2 tablespoons olive oil, salt, and cumin in a food processor.
  2. Process until the mixture is completely smooth, scraping down the sides as needed. Add 1-2 tablespoons of cold water if the hummus is too thick.
  3. Taste the hummus and adjust salt or lemon juice as desired.
  4. Spread the finished hummus evenly onto a shallow serving platter. Create a slight well in the center with the back of a spoon.
  5. Arrange the cherry tomatoes, cucumber, and toasted pine nuts over the hummus.
  6. Sprinkle the chopped parsley and smoked paprika over the top.
  7. Drizzle generously with extra olive oil just before serving.
  8. Serve immediately with warm pita bread or fresh vegetables.

Notes

  • For an extra layer of flavor, you can roast the chickpeas briefly before blending.
  • Feel free to substitute toppings based on what you have available, like olives or roasted red peppers.
  • Make the hummus up to two days ahead and store it covered in the refrigerator. Add toppings right before serving.
