Ingredients

Scale
  • 2 pounds carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, toss the cut carrots with olive oil, maple syrup, chopped rosemary, salt, and pepper until everything coats the carrots evenly.
  3. Spread the seasoned carrots in a single layer on a large baking sheet. Do not overcrowd the pan.
  4. Roast for 25 to 30 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
  5. Serve immediately and enjoy your flavorful side dish.

Notes

  • For extra flavor, add a pinch of garlic powder with the salt and pepper.
  • If your carrots are very thick, cut them into smaller pieces to ensure even cooking.
  • You can substitute fresh thyme for rosemary if you prefer a different herb profile.
