Make your pork chops juicy and flavorful with this simple, bright citrus garlic marinade. It works great for grilling or baking.

Ingredients

Scale
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 bone-in pork chops (about 1 inch thick)

Instructions

  1. In a medium bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, Dijon mustard, oregano, salt, and pepper to create the citrus garlic pork chop marinade.
  2. Place the pork chops in a large, resealable plastic bag or a shallow dish.
  3. Pour the marinade over the pork chops, ensuring they are fully coated.
  4. Seal the bag or cover the dish. Refrigerate for at least 2 hours, or up to 8 hours for the best flavor. Do not marinate overnight for this recipe, as the citrus can start to break down the meat too much.
  5. Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
  6. For grilling: Preheat your grill to medium-high heat. Grill the pork chops for 5 to 7 minutes per side, until the internal temperature reaches 145 degrees Fahrenheit.
  7. For baking: Preheat your oven to 400 degrees Fahrenheit. Place the chops on a baking sheet lined with foil. Bake for 18 to 22 minutes, or until the internal temperature reaches 145 degrees Fahrenheit.
  8. Let the pork chops rest for 5 minutes before serving.

Notes

  • If you want a low-sodium option, reduce the added salt to 1/4 teaspoon and use low-sodium Dijon mustard.
  • This marinade is excellent for making easy pork marinade for quick weeknight meals.
  • For a deeper flavor, you can use this as an overnight pork marinade if you substitute half the citrus juice with apple cider vinegar.
