Make a hearty, flavorful Maryland Crab Soup featuring lump crab meat, fresh vegetables, and classic Old Bay seasoning for a true taste of the Chesapeake Bay.

Ingredients

Scale
  • 6 cups vegetable or chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup water
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons Old Bay Seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1 pound jumbo lump crab meat, picked over for shells
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice

Instructions

  1. Combine the broth, diced tomatoes (with juice), and water in a large pot or Dutch oven. Bring the mixture to a simmer over medium heat.
  2. Add the chopped onion, carrots, celery, green beans, corn, thyme, bay leaf, Old Bay Seasoning, pepper, and salt to the pot.
  3. Bring the soup back to a simmer, then reduce the heat to low, cover, and cook for 20 minutes, or until the vegetables are tender.
  4. Remove and discard the bay leaf.
  5. Gently stir in the Worcestershire sauce and lemon juice.
  6. Carefully fold in the lump crab meat. Heat through for about 5 minutes, being careful not to break up the crab meat too much.
  7. Taste and adjust salt and pepper if needed before serving hot.

Notes

  • For a richer flavor, substitute half of the broth with clam juice.
  • If you prefer a slightly thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering soup during the last 5 minutes of cooking.
  • Serve with saltine crackers or oyster crackers.
