Make these easy, crispy baked bites featuring spinach and salty feta cheese. They are perfect as a quick Mediterranean finger food or party appetizer.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed very dry
  • 4 ounces feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried mint
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 12 sheets phyllo dough, thawed
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the dried spinach, crumbled feta cheese, Parmesan cheese, beaten egg, dill, mint, black pepper, and garlic powder. Mix everything well until the filling is evenly combined.
  3. Lay one sheet of phyllo dough flat on a clean, dry surface. Brush the entire surface lightly with melted butter. Place a second sheet directly on top of the first.
  4. Place about 2 tablespoons of the spinach and feta mixture in a thin line along the short edge of the stacked phyllo sheets, leaving a small border.
  5. Fold the side edges of the phyllo over the filling slightly, then tightly roll the phyllo into a thin cylinder or cigar shape. Brush the outside of the roll with more melted butter.
  6. Slice the long roll into 1-inch pieces to create individual crisps. Place the crisps cut-side up on the prepared baking sheets. Repeat this process with the remaining phyllo and filling.
  7. Bake for 12 to 15 minutes, or until the phyllo is golden brown and very crisp.
  8. Remove from the oven and let cool slightly on the baking sheet before serving.

Notes

  • For maximum crispiness, press as much water out of the thawed spinach as possible using a clean kitchen towel or paper towels.
  • If you want a gluten free spinach feta snack, substitute the phyllo dough with thin slices of low-carb tortillas or use pre-made low-carb wonton wrappers.
  • You can make these ahead of time; store the assembled, unbaked crisps in an airtight container in the refrigerator for up to 24 hours, adding a few extra minutes to the bake time if baking directly from the fridge.
