A simple, creamy, and cheesy baked casserole that captures the flavor of Mexican street corn (elote or esquites). This dish is perfect for serving a crowd.

Ingredients

Scale
  • 2 (15 ounce) cans whole kernel corn, drained
  • 1 (10 ounce) package frozen corn, thawed
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/2 cup crumbled Cotija cheese, divided
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup panko breadcrumbs (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the drained canned corn and the thawed frozen corn.
  3. Add the sour cream, mayonnaise, Parmesan cheese, 3/4 cup of the Monterey Jack cheese, 1/4 cup of the Cotija cheese, cilantro, jalapeño, chili powder, cumin, salt, and pepper to the corn mixture. Stir until all ingredients are evenly combined.
  4. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
  5. Sprinkle the remaining 1/4 cup Monterey Jack cheese and 1/4 cup Cotija cheese over the top. If using, sprinkle the panko breadcrumbs evenly over the cheese layer.
  6. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese topping is melted and lightly golden brown.
  7. Let the casserole rest for 5 minutes before serving. Garnish with extra cilantro or a squeeze of lime juice, if desired.

Notes

  • For a spicier dish, leave some or all of the seeds in the jalapeño.
  • If you do not have Cotija cheese, you can substitute it with an equal amount of feta cheese, though the flavor will change slightly.
  • This casserole tastes best when made with fresh lime juice added just before serving.
