This Mexican street corn dip is inspired by the vibrant flavors of elote, perfect for your next party. It’s cheesy, spicy, and a guaranteed crowd-pleaser served with your favorite chips.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup crumbled cotija cheese
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a medium oven-safe skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the corn and green chilies.
  4. In a separate bowl, combine mayonnaise, sour cream, cilantro, Parmesan cheese, cotija cheese, chili powder, and cayenne pepper (if using).
  5. Add the corn mixture to the cheese mixture and stir until well combined. Season with salt and pepper to taste.
  6. Spread the dip evenly in the skillet.
  7. Bake for 20-25 minutes, or until bubbly and lightly browned.
  8. Serve hot with tortilla chips or your favorite dippers.

Notes

  • For a creamier dip, you can add a block of cream cheese softened to the mayonnaise and sour cream mixture.
  • Adjust the spice level by adding more or less cayenne pepper, or a pinch of red pepper flakes.
  • You can grill the corn for an extra smoky flavor before adding it to the dip.
