Bake these delightful Mini Mushroom Brie Tartlets. They offer a warm, savory bite perfect for appetizers or snacks. Sasha brings her intuitive touch to this simple, flavorful recipe.

Ingredients

Scale
  • 1 package (14.1 ounces) refrigerated pie crusts (2 crusts)
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 ounces Brie cheese, rind removed and cut into small pieces
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin.
  2. Unroll the pie crusts. Use a 3-inch round cookie cutter to cut out circles from the dough. You should get about 10-12 circles per crust.
  3. Gently press each dough circle into the cups of the prepared muffin tin, forming a small shell. Prick the bottom of each shell a few times with a fork.
  4. Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.
  5. Add the minced garlic and thyme to the mushrooms. Cook for 1 minute more until fragrant. Season with salt and pepper.
  6. Divide the cooked mushroom mixture evenly among the pie crust shells.
  7. Top the mushrooms in each tartlet with a small piece of Brie cheese.
  8. Brush the edges of the pastry with the beaten egg wash.
  9. Bake for 15-18 minutes, or until the crusts are golden brown and the cheese is melted and bubbly.
  10. Let the tartlets cool in the tin for 5 minutes before carefully removing them. Serve warm.

Notes

  • Sasha suggests tasting the mushrooms before adding them to the tarts; adjust seasoning if needed.
  • If you do not have a muffin tin, you can bake these on a baking sheet, but they will spread more like small open-faced tarts.
  • For a richer flavor, use a mix of wild mushrooms instead of just cremini.
