Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed cooked sweet potato (about 1 medium sweet potato)
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Pinch of ground nutmeg
  • Optional topping: Mini marshmallows or chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until just combined.
  5. Stir in the mashed sweet potato, milk, cinnamon, ginger, and nutmeg until the mixture is smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  7. Spoon the batter evenly into the prepared muffin liners, filling each cup about two-thirds full.
  8. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  9. If using toppings, remove the cups from the oven and immediately place marshmallows or pecans on top. Return to the oven for 1-2 minutes until the marshmallows are puffed and lightly golden, or just heated through.
  10. Let the cups cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can cook your sweet potato by baking it whole or steaming it until very tender before mashing.
  • For a richer flavor, use evaporated milk instead of regular milk in the filling.
  • These cups freeze well. Cool them completely, then store them in an airtight container in the freezer for up to one month.
