Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the Filling: 1 cup heavy cream, 1/4 cup powdered sugar, 1/2 teaspoon vanilla extract
  • For the Frosting: 1 cup unsweetened chocolate chips, 1/2 cup heavy cream, 2 tablespoons butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10×15 inch jelly roll pan.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared jelly roll pan and spread evenly.
  6. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the filling. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Once the cake is baked, immediately invert it onto a clean kitchen towel dusted with powdered sugar.
  9. Carefully peel off the parchment paper.
  10. While the cake is still warm, spread the whipped cream filling evenly over the surface.
  11. Starting from one of the shorter ends, tightly roll up the cake with the towel.
  12. Let the rolled cake cool completely.
  13. Prepare the frosting. In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth. Stir in the butter until melted and combined.
  14. Once the cake is cooled, unroll it carefully.
  15. Spread the chocolate frosting over the cake.
  16. Roll the cake up again, this time without the towel, to create the yule log shape.
  17. Chill the cake for at least 30 minutes before slicing into mini portions.

Notes

  • Ensure your baking pan is properly greased and floured to prevent sticking.
  • Do not overmix the batter to keep the cake tender.
  • Using a warm cake for rolling helps prevent cracking.
  • Chill the cake thoroughly before frosting and slicing for cleaner cuts.
