Ingredients
Scale
4 (6-ounce) salmon fillets, skin on or off
1/4 cup white miso paste
2 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons mirin (sweet rice wine)
1 tablespoon brown sugar
1 teaspoon fresh ginger, grated
1 clove garlic, minced
1 teaspoon sesame oil
Optional: Sesame seeds and sliced green onions for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
In a small bowl, whisk together the miso paste, soy sauce, mirin, brown sugar, grated ginger, minced garlic, and sesame oil until you have a smooth glaze.
Pat the salmon fillets dry with a paper towel. This helps the glaze stick better.
Place the salmon on the prepared baking sheet.
Spoon or brush the miso glaze generously over the top of each salmon fillet.
Bake for 12 to 15 minutes, depending on the thickness of your fillets. The salmon should flake easily with a fork when done.
For extra color, you can briefly broil the salmon for the last 1 to 2 minutes, watching carefully to prevent burning.
Remove from the oven. Garnish with sesame seeds and sliced green onions, if desired. Serve immediately.
Notes
Patting the salmon dry before glazing helps achieve a better crust.
If you prefer a stronger glaze flavor, you can marinate the salmon for up to 30 minutes before baking, but do not marinate longer as the salt in the miso can start to cure the fish.
Use a lighter hand when broiling; miso sugars burn quickly.
Adjust the amount of brown sugar based on your preference for sweetness.
