Ingredients
Scale
4 ounces bittersweet chocolate, chopped
4 ounces unsalted butter
2 large eggs
2 large egg yolks
1/4 cup granulated sugar
1 tablespoon all-purpose flour
Pinch of salt
Butter and cocoa powder for ramekins
Instructions
Preheat your oven to 425 degrees F (220 degrees C).
Generously butter four 6-ounce ramekins. Dust the insides with cocoa powder, tapping out any excess.
Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of simmering water. Stir until completely smooth. Remove from heat and let it cool slightly.
In a separate bowl, whisk together the eggs, egg yolks, and sugar until the mixture is pale and slightly thickened.
Gently fold the slightly cooled chocolate mixture into the egg mixture.
Whisk in the flour and salt until just combined. Do not overmix.
Divide the batter evenly among the prepared ramekins.
Place the ramekins on a baking sheet. Bake for 12 to 14 minutes. The edges should look set, but the center should still be soft.
Let the cakes rest in the ramekins for 1 minute.
Carefully invert each cake onto a serving plate. Serve immediately while the center is molten.
Notes
You can prepare the batter ahead of time and keep it covered in the refrigerator for up to a day. Bake time may need a slight adjustment if baking cold batter.
For easy removal, ensure you butter and dust the ramekins thoroughly.
Serve with fresh raspberries or vanilla ice cream for a wonderful contrast.
