Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup chicken broth
  • 1/2 cup dried apricots, halved
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Brown the chicken in batches; remove and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the garlic and ginger; cook for 1 minute more until fragrant.
  5. Add the cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1 minute, stirring constantly to toast the spices.
  6. Return the chicken to the pot. Add the diced tomatoes, chicken broth, and dried apricots. Stir everything together.
  7. Bring the mixture to a simmer. Cover the pot, reduce the heat to low, and cook for 30 minutes.
  8. Stir in the rinsed chickpeas. Continue to simmer, covered, for another 15 minutes, allowing the flavors to meld.
  9. Taste and adjust salt and pepper as needed.
  10. Serve hot, garnished with fresh chopped cilantro.

Notes

  • If you do not have a tagine, a heavy-bottomed Dutch oven works perfectly for this stew.
  • For a richer flavor, use saffron threads steeped in a little warm water before adding to the stew.
  • This dish pairs wonderfully with couscous or crusty bread for soaking up the sauce.
  • You can use chicken drumsticks instead of thighs if you prefer bone-in chicken.
