- 8 ounces cream cheese, softened
- 2 cups powdered sugar, plus more for coating
- 1 teaspoon lemon extract
- 1 tablespoon fresh lemon zest
- 1 tablespoon fresh lemon juice
- Place the softened cream cheese in a medium bowl. Beat it with an electric mixer until smooth.
- Gradually add the 2 cups of powdered sugar to the cream cheese, mixing until fully combined.
- Mix in the lemon extract, lemon zest, and lemon juice until the mixture is uniform.
- Cover the bowl and chill the mixture in the refrigerator for at least 1 hour, or until firm enough to roll.
- Scoop out small amounts of the mixture (about 1 tablespoon each) and roll them between your palms to form smooth balls.
- Place extra powdered sugar in a shallow dish. Roll each truffle ball in the powdered sugar until fully coated.
- Place the finished truffles on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes before serving to set completely.
Notes
- For a different coating, you can melt white chocolate chips and dip the chilled truffles instead of using powdered sugar.
- If the mixture is too soft to roll after chilling, return it to the refrigerator for another 30 minutes.
- Use fresh lemon zest and juice for the best bright flavor.
