Make this easy, refreshing layered dessert using vanilla wafers, a zesty lemon cream, and fresh strawberries. It requires no oven time and sets up perfectly in the refrigerator.

Ingredients

Scale
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • 1 (12 ounce) box vanilla wafer cookies
  • 2 cups fresh strawberries, sliced

Instructions

  1. In a large bowl, beat the softened cream cheese, powdered sugar, and granulated sugar until smooth.
  2. Mix in the lemon juice, lemon zest, and vanilla extract until just combined. Set aside.
  3. In a separate, chilled bowl, whip the cold heavy whipping cream until stiff peaks form.
  4. Gently fold half of the whipped cream into the cream cheese mixture until no streaks remain.
  5. To assemble, spread a thin layer of the lemon cream mixture on the bottom of an 8×8 inch baking dish.
  6. Arrange a single layer of vanilla wafers over the cream.
  7. Top the wafers with half of the sliced strawberries.
  8. Spread half of the remaining lemon cream mixture over the strawberries.
  9. Repeat the layers: wafers, remaining strawberries, remaining lemon cream.
  10. Top the final layer of cream with the remaining whipped cream, spreading it evenly.
  11. Cover the dish tightly with plastic wrap.
  12. Refrigerate for at least 6 hours, or preferably overnight, to allow the wafers to soften.
  13. Slice and serve cold.

Notes

  • You can substitute graham crackers for vanilla wafers if you prefer a slightly different texture.
  • For the best flavor, use fresh, ripe strawberries.
  • Chill the bowl and whisk attachment before whipping the heavy cream for faster results.
