  • 3 large eggs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup whole milk
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  4. Slowly stream in the olive oil while whisking constantly until fully incorporated.
  5. Whisk in the milk, lemon zest, lemon juice, orange juice, and vanilla extract until just combined.
  6. Gently fold the dry ingredients into the wet ingredients until no streaks of flour remain. Do not overmix.
  7. Pour the batter into your prepared cake pan.
  8. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. To make the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

Notes
