Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (adjust to your spice preference)
  • 12 ounces dried pasta (penne or rotini work well)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Toss the cut chicken pieces with Cajun seasoning in a bowl.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned, about 4 to 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 3 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the diced tomatoes (with juice), chicken broth, Italian seasoning, and red pepper flakes. Bring the mixture to a boil.
  6. Add the dry pasta to the boiling liquid. Stir well to prevent sticking.
  7. Reduce the heat to medium-low, cover the skillet, and simmer for 10 to 12 minutes, or until the pasta is cooked al dente, stirring occasionally.
  8. Stir the cooked chicken back into the pasta mixture.
  9. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy. Heat through for 1 to 2 minutes, but do not boil after adding cream.
  10. Taste and adjust seasoning with salt and pepper as needed.
  11. Serve immediately, garnished with fresh parsley.

Notes

  • For extra heat, you can add a dash of your favorite hot sauce along with the cream.
  • If the sauce seems too thick, add a splash more chicken broth or milk until you reach your desired consistency.
  • This recipe is great for using up leftover cooked chicken; just add it back in during step 8.
