Make this simple, flavorful pasta dish entirely in one pot. It combines creamy tomato sauce, fresh basil, and tortilla strips for a quick weeknight dinner.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 8 ounces dry pasta (like penne or rotini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 1 cup tortilla strips (store-bought or homemade)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the diced tomatoes (with juice) and the vegetable broth. Bring the mixture to a boil.
  4. Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is al dente.
  5. Remove the pot from the heat. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  6. Stir in the fresh chopped basil. Season with salt and pepper to your preference.
  7. Divide the pasta into bowls. Top each serving with tortilla strips before serving.

Notes

  • If you prefer a thicker sauce, let the pasta sit uncovered for 5 minutes after removing it from the heat before stirring in the cream.
  • You can substitute half-and-half for heavy cream for a slightly lighter sauce.
  • Use corn or flour tortilla strips; they soften slightly in the sauce but retain some texture.
