Ingredients
Scale
4 boneless, skinless chicken breasts (about 6 oz each)
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup all-purpose flour
2 large eggs
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil or cooking spray
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Gently pound them to an even thickness, about 3/4 inch thick. This helps them cook evenly and stay juicy.
Set up your dredging station with three shallow dishes. In the first dish, combine the flour, salt, and pepper. In the second dish, whisk the eggs with the Dijon mustard until fully combined. In the third dish, mix the Panko breadcrumbs, grated Parmesan cheese, garlic powder, and Italian seasoning.
Dredge each chicken breast first in the flour mixture, shaking off any excess.
Next, dip the floured chicken into the egg mixture, letting any extra drip off.
Finally, press the chicken firmly into the Panko-Parmesan mixture, coating both sides completely. Press the crust on so it adheres well.
Place the coated chicken breasts on the prepared baking sheet. Drizzle lightly with olive oil or spray with cooking spray for extra golden color.
Bake for 18 to 22 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown and crispy. For extra crispiness, you can briefly broil for the last 1-2 minutes, watching carefully to prevent burning.
Let the chicken rest for 5 minutes before serving. Serve this restaurant style parmesan chicken with your favorite sides.
Notes
For an Air Fryer Chicken Parmesan variation, place crusted chicken in the air fryer basket, spraying lightly with oil. Cook at 380°F (195°C) for 12-15 minutes, flipping halfway through, until golden and cooked through.
If you want a tangier flavor, substitute the Dijon mustard with 1 tablespoon of mayonnaise in the egg wash mixture.
This recipe works well with chicken cutlets or thinner slices for a quicker cook time.
