Ingredients
Scale
6 large fresh peaches, peeled and sliced
1/2 cup granulated sugar (for peaches)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1/4 cup all-purpose flour (for peaches)
1 cup all-purpose flour (for topping)
1/2 cup packed brown sugar (for topping)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1/4 cup milk
1 large egg, beaten (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a large bowl, gently toss the sliced peaches with granulated sugar, lemon juice, cinnamon, nutmeg, and allspice. Let this mixture sit for 10 minutes.
Sprinkle the 1/4 cup of flour over the peaches and stir to coat evenly. Pour the peach mixture into the prepared baking dish.
In a separate medium bowl, whisk together the 1 cup flour, brown sugar, baking powder, and salt for the topping.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Stir in the milk until just combined; do not overmix the dough.
Drop spoonfuls of the topping batter evenly over the peaches. It does not need to cover completely.
Brush the topping lightly with the beaten egg wash and sprinkle with coarse sugar.
Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let the cobbler cool for at least 15 minutes before serving. Enjoy the warmth!
Notes
Use ripe, flavorful peaches for the best results.
You can use frozen peaches if fresh are unavailable, but do not thaw them completely before using.
Anya suggests adding a small splash of vanilla extract to the peach mixture for depth.
