These classic Peanut Butter & Jelly Thumbprint Cookies are a delightful, nostalgic treat perfect for any occasion. They feature a soft, chewy peanut butter cookie base with a sweet jelly center, just like you remember from school lunches.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup jelly or jam (grape or strawberry recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll the dough into 1-inch balls.
  7. Place the dough balls about 2 inches apart on the prepared baking sheets.
  8. Use your thumb to gently press an indentation into the center of each cookie ball.
  9. Fill each indentation with about 1/2 teaspoon of jelly or jam.
  10. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure your butter is softened but not melted for the best cookie texture.
  • If the dough is too sticky, you can chill it for 30 minutes before rolling.
  • Experiment with different flavors of jelly or jam to find your favorite combination.
  • These cookies are best stored in an airtight container at room temperature.
