Ingredients
Scale
8 ounces cream cheese, softened
1/2 cup finely chopped dill pickles
1/4 cup pickle juice
1 teaspoon dried dill weed
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
4 large flour tortillas (about 10 inches)
1/2 cup shredded cheddar cheese (optional)
Instructions
In a medium bowl, combine the softened cream cheese, chopped dill pickles, pickle juice, dried dill weed, garlic powder, and black pepper. Mix until fully combined and smooth.
Spread a thin, even layer of the pickle cream cheese mixture over one flour tortilla, leaving about a half-inch border on all edges.
If using, sprinkle half of the shredded cheddar cheese evenly over the cream cheese layer.
Starting from one edge, tightly roll the tortilla into a log. Wrap the log tightly in plastic wrap.
Repeat the process with the remaining tortillas and filling.
Refrigerate the wrapped logs for at least 2 hours, or until firm enough to slice. This step is important for clean cuts.
When ready to serve, unwrap the logs and slice each into 1-inch thick pinwheels.
Arrange the Pickle Dip Pinwheels on a serving platter.
Notes
For make ahead convenience, you can prepare the logs up to 24 hours in advance.
If your cream cheese is too cold, microwave it for 10 seconds to soften slightly before mixing.
Use crisp, good quality dill pickles for the best flavor.
