You will love making this Pistachio Crusted Chicken. It is a flavorful and impressive dish that is simple enough for a weeknight but special enough for guests. Sasha brings her intuitive touch to this recipe, giving you a wonderful crunch you will enjoy.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup shelled pistachios
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs, lightly beaten
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a food processor, pulse the pistachios until they are coarsely chopped. You want some texture, not a fine powder.
  3. In a shallow dish, combine the chopped pistachios, panko breadcrumbs, Parmesan cheese, salt, pepper, and garlic powder. Mix well.
  4. In a second shallow dish, whisk together the eggs and Dijon mustard.
  5. Pat the chicken breasts dry with paper towels.
  6. Dip each chicken breast first into the egg mixture, letting any excess drip off.
  7. Next, press the chicken firmly into the pistachio mixture, coating both sides completely.
  8. Place the coated chicken breasts on the prepared baking sheet.
  9. Drizzle the tops of the chicken with olive oil.
  10. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  11. Let the chicken rest for 5 minutes before slicing and serving.

Notes

  • You can substitute almonds or walnuts for pistachios if needed.
  • For an extra layer of flavor, add a pinch of dried thyme to the pistachio mixture.
  • Do not over-process the pistachios; a slightly chunky texture gives the best crust.
