Ingredients
Scale
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 large egg
1 cup milk
1/4 cup vegetable oil
1 cup shredded mozzarella cheese, divided
1/2 cup finely chopped pepperoni
1/4 cup pizza sauce
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
In a separate bowl, whisk the egg, milk, and vegetable oil until combined.
Pour the wet ingredients into the dry ingredients. Mix just until combined; do not overmix the batter. A few lumps are fine.
Gently fold in half (1/2 cup) of the mozzarella cheese and all of the chopped pepperoni into the batter.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with a small spoonful of pizza sauce.
Sprinkle the remaining 1/2 cup of mozzarella cheese over the sauce on top of each muffin.
Bake for 18 to 20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These lunchbox pizza bites freeze well. Cool them completely, then place them in a freezer-safe bag. Reheat in the microwave or oven when you are ready to eat them.
For extra flavor, you can add a pinch of red pepper flakes to the batter.
If you do not have pepperoni, you can substitute it with cooked, crumbled sausage or finely chopped ham.
