Ingredients

Scale
  • 1 pound ground meat (beef, pork, or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pomegranate juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground meat, breadcrumbs, chopped onion, egg, minced garlic, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into small balls, about 1-inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until browned and cooked through.
  6. While the meatballs are baking, prepare the glaze. In a small saucepan, whisk together the pomegranate juice, soy sauce, and honey.
  7. In a small bowl, whisk the cornstarch with 2 tablespoons of water until smooth. Add this mixture to the saucepan with the pomegranate juice.
  8. Cook the glaze over medium heat, stirring constantly, until it thickens.
  9. Once the meatballs are cooked, add them to the saucepan with the glaze. Toss gently to coat.
  10. Serve warm.

Notes

  • For a spicier glaze, add a pinch of red pepper flakes.
  • You can substitute ground chicken or a plant-based ground for the meat.
  • Garnish with fresh pomegranate seeds and chopped parsley before serving.
