Ingredients
Scale
1 cup Pomegranate Juice (100% juice)
1/2 cup Fresh Lime Juice
1/4 cup Simple Syrup (adjust to taste)
1/4 cup Fresh Mint Leaves, gently muddled
2 cups Sparkling Water or Club Soda, chilled
Ice cubes
Pomegranate arils and mint sprigs for garnish
Instructions
Place the mint leaves in the bottom of a sturdy glass. Gently press them with a muddler or the back of a wooden spoon. You want to release the oils, not shred the leaves.
Add the pomegranate juice, fresh lime juice, and simple syrup to the glass.
Stir well to combine the juices and syrup with the muddled mint.
Fill the glass completely with ice cubes.
Top each glass with chilled sparkling water or club soda.
Gently stir once more from bottom to top to mix the soda without losing too much fizz.
Garnish with a few pomegranate arils and a fresh mint sprig before you serve.
Notes
If you prefer a less sweet drink, reduce the simple syrup to two tablespoons.
For a stronger mint flavor, let the muddled mint sit in the juice mixture for about five minutes before adding ice.
You can make a large batch of the juice mixture ahead of time, storing it in the refrigerator. Add the sparkling water just before serving.
