Ingredients
Scale
1 lb Russet potatoes
1 tablespoon vegetable oil
1/2 cup finely chopped white onion
1/2 teaspoon salt
1/4 teaspoon black pepper
12 corn tortillas
Vegetable oil for frying
Toppings: shredded lettuce, crumbled cotija cheese, Mexican crema or sour cream, salsa roja
Instructions
Peel and boil the potatoes until fork-tender. Drain them completely and mash them roughly in a bowl.
Heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the mashed potatoes, salt, and pepper to the skillet. Cook, stirring occasionally, for 5 to 7 minutes until the mixture is heated through and slightly dry. This is your filling.
Warm the corn tortillas briefly in a dry skillet or microwave to make them pliable.
Place a spoonful of the potato filling near one edge of a tortilla. Roll the tortilla tightly around the filling to form a cylinder. Secure with a toothpick if necessary.
Heat about 1 inch of frying oil in a deep skillet to 350°F (175°C).
Carefully place the rolled tacos into the hot oil, seam-side down first. Fry for 2 to 3 minutes per side until they are golden brown and crispy. Do not overcrowd the pan.
Remove the tacos from the oil and place them on a paper towel-lined plate to drain excess grease. Remove any toothpicks before serving.
Serve immediately topped with lettuce, cheese, crema, and salsa.
Notes
For a vegan option, skip the cheese and crema, or substitute with vegan sour cream and nutritional yeast.
If you prefer soft tacos, skip the frying step and simply warm the filled tortillas.
To make the filling drier (which helps prevent tacos from unrolling), cook the potato mixture longer in the skillet.
