Make easy, homemade pumpkin waffles with classic fall spices. This recipe yields waffles that are light inside and golden brown outside, perfect for a cozy weekend brunch.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup melted unsalted butter, plus more for greasing
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the flour, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt in a large bowl. Whisk these dry ingredients together well.
  2. In a separate medium bowl, whisk together the milk, eggs, pumpkin puree, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Mix gently with a whisk until just combined. Do not overmix; a few small lumps are fine for fluffy waffles.
  4. Preheat your waffle iron according to the manufacturer’s directions. Lightly brush the grids with melted butter.
  5. Pour the batter onto the hot waffle iron, using the amount recommended for your specific iron to fill it without overflowing.
  6. Cook until the waffle is golden brown and crispy, usually 4 to 6 minutes, depending on your iron’s setting.
  7. Remove the waffle and place it on a wire rack set over a baking sheet to keep it crisp while you cook the remaining batter.
  8. Serve immediately with your favorite toppings.

Notes

  • For extra crispy waffles, place finished waffles on a wire rack in a 200°F oven while you finish cooking the batch.
  • You can substitute 1 teaspoon of pumpkin pie spice blend for the individual cinnamon, nutmeg, and ginger measurements.
  • To make a brown butter maple syrup, gently melt 1/4 cup of butter in a small saucepan until brown specks form at the bottom and it smells nutty. Whisk in 1/2 cup of maple syrup and warm through.
