Ingredients

Scale
  • 1 pound Mexican melting cheese (like Oaxaca or Asadero), shredded
  • 1 tablespoon butter
  • 1/2 cup diced white onion
  • 1 small jalapeño, minced (seeds removed for less heat)
  • 1 clove garlic, minced
  • 1/2 cup diced roasted poblano pepper
  • 1/4 cup heavy cream
  • Salt to taste
  • Tortilla chips for serving

Instructions

  1. Shred your cheese and set it aside.
  2. Melt the butter in a small oven-safe skillet over medium heat.
  3. Add the onion and cook until soft, about 3 minutes.
  4. Stir in the minced jalapeño and garlic. Cook for 1 minute until fragrant.
  5. Add the roasted poblano pepper and cook for another minute.
  6. Reduce the heat to low. Stir in the cream.
  7. Gradually add the shredded cheese to the skillet, stirring constantly until completely melted and smooth.
  8. Taste and add salt as needed.
  9. Serve immediately straight from the skillet with warm tortilla chips.

Notes

  • For an extra layer of flavor, you can brown a small amount of chorizo sausage and mix it in before adding the cheese.
  • If you do not have oven-safe skillets, transfer the melted cheese mixture to a small, warm serving dish before serving.
