Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, and vanilla extract.
  3. Mix until a soft dough forms. If using, stir in the chocolate chips.
  4. Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  5. Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
  6. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a cream cheese frosting swirl, mix softened cream cheese with a little powdered sugar and swirl into the dough before baking.
  • Add white chocolate chips for a festive contrast.
  • These cookies are great for decorating with royal icing or sprinkles.
